Corrective Action: The establishment shall have documentation that provides evidence that employees have been informed of their responsibility to report information about their health and activities as they relate to diseases that are transmissible through food to the person in charge. - (Correct By: Jun 21, 2021)
5 PF 2-501.11: A FOOD ESTABLISHMENT shall have procedures for EMPLOYEES to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the FOOD ESTABLISHMENT. The procedures shall address the specific actions EMPLOYEES must take to minimize the spread of contamination and the exposure of EMPLOYEES, consumers, FOOD, and surfaces to vomitus or fecal matter.
The establishment has no written procedure for employees to follow when cleaning up fecal matter or vomitus; also, the kit is incomplete--the facility does not have any absorbent material to clean-up after a vomiting or diarrheal event. Corrective Action: create a written procedure for cleaning up fecal matter and vomitus and put together a complete diarrheal and vomiting clean-up kit. - (Correct By: Jun 21, 2021)

16 P 4-501.114 (C): (C) A chemical SANITIZER used in a SANITIZING solution for a manual or mechanical operation at contact times specified under ¶4-703.11(C) shall meet the criteria specified under §7-204.11 Sanitizers, Criteria, shall be used in accordance with the EPA- registered label use instructions, and shall be used as follows: (C) A quaternary ammonium compound solution shall: (1) Have a minimum temperature of 24°C (75°F), (2) Have a concentration as specified under § 7-204.11 and as indicated by the manufacturer's use directions included in the labeling, and (3) Be used only in water with 500 MG/L hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions.
The dishwasher does not dispense sanitizer at the proper concentration (<200 PPM of a QUAT solution). All equipment shall be sanitized within the sanitizer compartment of the 3-compartment sink. - (Correct By: Jun 10, 2021)

The two reach-in coolers located in the kitchen were observed to be holding at 50F to 55F. Product within those coolers were stocked today. All products shall be discard after four hours. Use labeling to track time to ensure product is discard in a timely manner. - (Correct By: Jun 10, 2021)
